Meat gets its delicious flavor from the golden brown sear that comes from high heat. To achieve the perfect sear, start by patting the meat with paper towels to dry it. The less moisture there is to evaporate from the surface, the easier it will be to brown the cut. Flip cuts of meat frequently to promote even cooking and avoid burning one side. The exception to this rule? If you’re cooking burgers, aim to flip just once or twice to lock in juices. Leave some space between items on the grill so there’s room for the steam and heat to rise around the edges. This will promote an even cook and keep edges crispy.
